Don't have a specific recipe, but it's a combination of dashi, mirin and soy sauce, heavy on the dashi.
I don't know where you live but most Chinese or Japanese grocery stores will have fried tofu and so will most progressive supermarkets.

The sauce is made of dashi broth, Japanese soy sauce, and mirin.
Looking at them, I'd say the keys are using the right kind of tofu (Japanese style silken extra-firm) draining it carefully, and frying it quickly, in hot oil, small pieces, not too many at a time.
I have thought of asking one of the waitresses to ask the fry chef for pointers, but I always chicken out a bit.

It would have been even better if the tofu had been softer (I usually like firm tofu better, but for this particular dish softer kinds work better) and there had been daikon-oroshi, or finely grated daikon radish, but Oh that was so much of a taste of home, really.
