ANZAC biscuits are a snack food most commonly made primarily from rolled oats, coconut, and golden syrup.
The biscuit appears to be from a variation of Scottish oat cakes, said to be from the Scottish-influenced city of Dunedin.
There is a general exemption granted for ANZAC biscuits, as long as they remain basically true to the original recipe and are sold and referred to as ANZAC biscuits and never as cookies.

Anzac biscuits Isn't it interesting that our recipes are both from the Edmonds Cookbook, but the quantities are quite different.
I'm usually pretty stingy when dolloping out biscuit dough, wanting to make as many as possible, so that may be why mine came out thin and crispy; a legacy of that wartime suspicion of extravagance!

Leafing my way through the Great Outdoors article I discovered a recipe for Oaty Apricot Biscuits which are made in a similar easy way as the Anzac Biscuits, and their ingredients contain some of my favourite things - oats, apricots, ground almonds and even maple syrup.
These Oaty Apricot Biscuits have a more chewy texture than the Anzac Biscuits - oaty, undoubtedly, but enlivened with the chunks of chopped dried apricot distributed throughout - plus they are happy to sit in a box until needed.
I think this is a recipe that I'll be sticking with.

There are a few theories on the origins of ANZAC biscuits (or ANZAC Cookies for Americans) but it is certain that they came about during the First World War, around 1914/15.
There is even the suggestion that they originated from Scottish Oatmeal Cakes which is entirely possible.
For a little variety you may wish to add 2 teaspoons of ginger spice or even Wattle Seeds, a recent addition but don't ask me where to get them.
