 Classification of Sauternes and Barsac
In Tokay, however, the wines get a taste of caramel, more like a sweet Madeira, while in Sauternes the wines tastes (and smells) of flowers and honey.

 Doisy-Daene - wine
The wines from the best vintages can age gracefully for up to 20 years.
Château Doisy-Daëne is a Barsac estate that produces top-class, sweet Bordeaux whites that are characterised by their finesse and richness.
It takes the second part of its name from an English gentleman who bought it when the original Doisy estate was split up in the 19th century.

 Barsac/Sauterne
The wine tasting was 4 km away in Cerons -- not Barsac.
(Only much later did I learn Barsac is only of the great wine producing regions of the world.)
With its yellow sandstone houses and Spanish-style church, Barsac resembled a Mexican village in a cowboy movie, not a wine village in southern France.

 Doisy-Vedrines - wine
Doisy-Védrines is one of the richest and most full-bodied wines in Barsac and it significantly uses the Sauternes AC rather than the Barsac one.
It needs at least 5 years of bottle ageing and the best vintages will keep for up to 25 years.
The 2003 Sauternes in general have been overshadowed by the reds but in contrast to 2000, 2003 is a great year for these intensely sweet whites, with the best, like this wine, rivaling the wonderful 2001s.

 Bordeaux Classifications - Into Wine
The white wines of Sauternes and Barsac were also included in a two-class ranking.
They came up with a five-class ranking system of the red wines from the Médoc region, with the exception of Château Haut-Brion from Graves, which had to be included due to its renown.
The list reflected the market's view of the relative quality between the wines in terms of the selling price and reputation of the various châteaux.

 Barsac AC Index
In my own experience, the wines from Barsac do tend to mature more quickly than Sauternes, although both "Doisy's" produced exceptional wines in 1970 that were fresh and vigorous.
The Appélation Controlée of Sauternes consists of five communes, Sauternes itself, Preignac, Bommes, Fargues and Barsac that lies furthest to the north, the only one with its own designated A.C. Some would say that the wines from Barsac are a little richer, less elegant and complex than those of Sauternes.

International Recipes OnLine: Food and Wine Dictionary: Barsac AC Welcome to International Recipes OnLine!
Because Barsac is part of the Sauternes appellation, producers may also use "Sauternes" on their label, although most top producers simply use "Barsac." Like their Sauternes neighbors, Barsac wines are sweet and luscious, although generally lighter and more refined.
It's part of France's BORDEAUX region and is located approximately 25 miles from the city of Bordeaux.
