Shimamura Takashi is Master Chef from the restaurant in Northern Japan called Nakamura-ya, and he works not only as a chef, but also as a discerning buyer at the seafood market in his hometown.
Also, Chen incorporates the innards into the liver sauce he mixes up.

I've never seen the preparation shown in full from start to finish, but it looks simple enough: Prawns or large shrimp are stir-fried with a scant, thick, bright-red Szechwan-style sauce that appears to have ketchup as a key ingredient and that is surely fiery.
But I've picked up on some really interesting ideas and crafted more than a few recipes of my own (such as the pork and shrimp roll featured last month) based on a glimpse of a dish being prepared by Chen, Morimoto, Sakai or one of their usually hapless challengers.

The Japanese Iron Chefs (Sakai, Morimoto, Chen Kenichi) for the most part, are actually deserving, even though I do not believe they have ever matched up against truly great chefs from other parts of the world, or even the rest of Southeast Asia.
(Trivia fact: whenever Iron Chef Chen Kenichi has a few minutes with extra ingredient, he always makes fried rice with it.
I was watching it years before Food Channel and America co-opted it, and dubbed it with stupid-sounding American English.

Since it would probably be over-powered by the peppercorns and stir-fried pork, I'm guessing that it was pureed along with the egg whites and fish.
When Chen made the small "brooms" out of the thinly sliced bamboo shoots, he had a thin band of some red vegetable around the base of each.

You also may be interested to know that Mapo Tofu was among dishes prepared by Iron Chef Chen Kenichi in 1999, when the final episodes of "Iron Chef" were filmed.
According to www.orientalfoodmaster.com, the dish was created by "an old lady who resided in Szechwan a long time ago." Her face had been scarred by the measles, thus people called her "Mapo," (ma meaning pock-marked and po meaning elderly woman).

 "Ryori no tetsujin" (1993)
Some of the dubbed voices sound downright silly (especially Chen Kenichi and Hiroyuki Sakai), but that's ok. I think that it adds an element of humor (intentional or not) without making the whole show seem like a big joke.
Reading subtitles for the whole show would get very tiresome.
And finally, they did a good job budgeting time.
