 [No title]
Espresso is a coffee beverage prepared using water under pressure and served in a preheated demitasse cup.
Traditionally, espresso is prepared by a master coffee maker, or barista.
Because few single-origin coffees provide all the flavors and aromas necessary for good espresso, baristas often blend several coffees together to achieve the taste they desire.

 The Fundamentals of Espresso
Italian espresso is a polyphasic beverage, prepared from roast and ground coffee and water alone, constituted by a foam layer of small bubbles with a particular tiger-tail pattern, on top of an emulsion of microscopic oil droplets in an aqueous solution of sugars, acids, protein-like material and caffeine, with dispersed gas bubbles and solids.
Espresso is a 45ml (1.5 ounces) beverage that is prepared from 7-9 grams of coffee through which clean water of 192¡ - 198¡ F (88¡ - 92¡ C) has been forced at 9-10 atmospheres of pressure, where the grind of the coffee has made the brewing "flow"* time approximately 22-28 seconds.
As for coffee, the term espresso is often construed inaccurately as a definition for a darkness of roast, a a general fineness of grind, a specific blend of coffees, and even mistakenly as if Espresso was a country where coffee is grown!

 Espresso
Espresso brewing is defined by four "M's": the Macinazione is the correct grinding of a coffee blend, Miscela is the coffee blend, Macchina is the espresso machine, and Mano is the skilled hand of the barista.
In a larger sense, it is an entire approach to coffee cuisine, involving not only roast and brewing method, but grind and grinder, a technique of heating milk, and a traditional menu of drinks.
A double espresso is a 47-62.5 mL (1.5-2 ounce) extract that is prepared from 14-17 grams of coffee through which purified water of 88-95°C has been forced at 9-10 atmospheres of pressure for a brew time of 22-28 seconds.

 Espresso Tampers & More
Espresso tampers come in a few different shapes: rounded, flat, sharp edges, beveled edges, rounded edges, wood, metal etc. The shape of the tamper is not that important compared to the way it fits in a given filter basket.
If your espresso is a medium roast, you can use a finer grind and a lighter tamp to achieve strong flavors without bitterness and over extraction.
The espresso blend, degree of roast, particle size from grinding, brewing temperature, infusion time and pump pressure all combine to make the final product.
