Isinglass - Wikipedia, the free encyclopedia
Isinglass is a substance obtained from the swimbladders of fish (especially sturgeon), used for the clarification of wine and beer.
Although very little isinglass remains in the beer which is drunk, many vegetarians consider beers which are processed with these finings to be unsuitable for vegetarian diets.
Isinglass finings are used extensively as a processing aid in the British brewing industry to accelerate the fining, or clarification, of beer.

ISIS - LoveToKnow Article on ISIS
The principal use of isinglass is for clarifying wines, beers and other liquids.
The finest isinglass, which comes from the Russian ports of Astrakhan and Taganrog, is prepared by steeping the sounds in hot water in order to remove mucus, andc.; they are then cut open and the inner membrane exposed to the air; after drying, the outer membrane is removed by rubbing and beating.

Isinglass is employed in the arts for various purposes, for clarifying or fining wines, beer, coffee, syrups, etc., and is a constituent of court-plaster.
Isinglass is also made in the eastern states, in this country, from the sounds of the hake (Gadus merluccius, Linné), and cod (Gadus Morrhua Linné, or Morrhua americana) and other fishes.
Isinglass prepared from the air-bags of large fishes, when unopened, is known as pipe or purse isinglass.

 Fining: Isinglass
Derived from fish swim-bladders, isinglass is a tropocollagen.
Ensure the isinglass is mixed well into the wine (in-line addition while rummaging tanks for example).
It is generally believed that isinglass residues do not remain in the wine.

BYO - Would fining with gelatin have an adverse effect on naturally conditioned beer?
You can fine your beer with isinglass (or gelatin), rack the clear beer off of the yeast and add yeast and sugar to the beer prior to bottling.
Bottled beer is another animal and you cannot use the cask technique to fine, prime and condition beer in the bottle.
These beers carbonate during the same time that the yeast is being pulled down to the bottom with the isinglass.

Isinglass settles much of the natural particulate in beer in a dense compact layer in the bottom of the storage vessel, resulting in a bright beer.
Isinglass finings powder is readily soluble in water, which is ready to use after 15-20 minutes of solubilisation in less than 15 degree Celsius temperature.
The ready to use product is called Isinglass Finings which contains preservative, organic acid that is used as wine clarifying agents and beer clarifying agents.

Potential Applications of Isinglass Adhesive for Paper Conservation
In nineteenth-century Europe domestic isinglass and isinglass imported from Russia were broadly available and were used for sizing paper in book and paper restoration, for gilding of glass and wood, and as a fixative for pastel drawings.
To prepare a solution of isinglass in water, the thin transparent sheets of dry isinglass were broken into small pieces and soaked in distilled water for an hour or more.
Isinglass is defined as a superior fish gelatin product, produced from the swim bladders of certain species of fish; the quality of the isinglass depends on the chosen species of fish, the manufacturing process, and additives.

 Enology Notes #43
Isinglass is principally used in white wine fining to bring out or unmask the fruit character without significant changes in tannin levels.
Fining agents are added to juices, wines, and sparkling wine cuvées for the purposes of enhancing clarity, color, aroma, flavor, and/or stability modification.
Isinglass has several advantages over gelatin in fining of white wines.

Isinglass, a fining agent made from fish bladders and used as a processing aid in the production of beer and wine, does not have a history of allergenicity.
This amount is well above the remnants of Isinglass in beer, and shows that beer is safe for fish allergy sufferers to drink.

Isinglass finings should then be added to the beer at rack or despatch.
After an appropriate time interval, which will vary with beer type, an assessment is made of the optimum rate of isinglass required to fine the beer.
An optimisation is run by making trials to optimise the rate of Isinglass addition within the range of 2 - 5 pints per barrel by adding 4, 6, 8 and 10 mls of RFU Isinglass to 4 labelled milk bottles and mixing well.

MFA - CAMEO - Material Description
Isinglass was originally made from air bladders of the great Russian beluga sturgeon, Acipenser huso, found in the fresh waters of the Caspian and Black Seas.
After restrictions were placed on Russian exports in 1939, other fish air bladders were used and isinglass became a generic term for glue derived from the swim bladder of various fish, e.g., North American isinglass is made from hake or cod.
The dried bladder is cut into thin translucent strips.

German purity laws mean that German-brewed beers are not fined with isinglass, but be careful because some apparently German beers have in fact been brewed in the UK or elsewhere.
As a general rule traditional, cask-conditioned beers ('real ales') are fined using isinglass.
Keg, canned, beersphere and some bottled beers are usually filtered without the use of animal substances.

A good tip given me was to let the dry Isinglass rehydrate in the cool water for 15 minutes before stirring into the wine, and that has worked well for me. But, you have to come back at least once a day and stir it into the wine until it has all dissolved, period.
Liquid Isinglass, on the other hand is pretty simple, and it too has worked well for me. But no matter which one I`ve used I always got the smeary glass and ended up racking twice before bottling.
Finaly I fished the floating isinglass particles out of the carboy with a plastic spoon & bottled the wine.

I have used irish moss in the boil, but usualy end up adding isinglass at bottle time anyhow to clear the beer up further.
Ive been adding my isinglass with my priming soluition when boiling it before adding it to the beer.
So when you have unfiltered beer going from the brewery to a distributor (usually a bigger brewery), to a depot, onto a dray, into a cellar, and then onto stillage, isinglass works better than other finings.

When storing your isinglass, it’s best to roll it up, because that will prevent creases.
The towel protects the plastic from the snaps and zippers on the cover, which can cause scratches.
If your snaps and zippers aren’t fastening as smoothly as you would like, a quick spray of WD-40 should cure that problem.

Kettle finings such as Irish Moss are used in the boil to assist coagulation of proteins, resulting in a much better hot and cold break, more stable beer, and less potential chill haze forming compounds in the finished beer.
Also, remember that kettle finings like Irish Moss and Whirlfloc, and "keg" finings like isinglass and gelatin, are completely different animals for different purposes.
With the lengthy preamble BS aside, I find I get great results using Whirlfloc in the boil, then gelatin 1 day after kegging and refridgerating.

Additionally, however, the Secretariat has recently been asked for guidance relating to trade in isinglass, which is also a product made from several species of sturgeon.
The Secretariat further suggests that, in future, countries that intend to authorize export of pressed caviar or isinglass should establish export quotas for these products, if they do not already do so.

Isinglass restaurant, Manchester West, Manchester - Manchester Restaurants and Menu
The restaurant is a strong proponent of both organic food and drink and traceable produce and has a trading policy which “backs farmers from around Manchester, bringing food from field to plate without middlemen, over-processing or wasted air miles.” The venue is consciously non-exclusive but offers city centre standards.
This new Urmston restaurant is run by two self-confessed food obsessives — head chef Lisa Walker and proprietor Julie Bagnoli, who founded the acclaimed Palmiro in Chorlton.
The name Isinglass itself -- it’s a delicacy made from fish bladder -- betrays the depth of their obsession.

 Isinglass - Yesterlegend
There is little doubt that Isinglass produced perhaps a fairly disappointing number of good sons and, of these, only John O'Gaunt was exceptional.
Equally, Isinglass will be perpetually remembered for producing a number of exceptional broodmares which made a profound impact on the development of the modern Thoroughbred.
The combination of Waxy - Penelope which produced Whalebone and Whisker was a very effective genetic mix, as it fused together the lines of Eclipse, Herod and Matchem in their progeny.
