The first method is by manipulating the flow of milk from a jug into the espresso (known as "free pour" latte art).
Taste should come before appearance because the time Latte Art can take, does detract from the freshness, and therefore the taste of coffee.
The second is by drawing designs with an implement (known as "etching"), using stencils, powders and milk foam.

When ever I order a latte, chai, or mocha (yes I am down with trendy drinks) the last thing I think about doing is looking at it.
It must be the type of establishments I visit, because my drinks are always served in a plastic cup with a lid.
It is safe to say that I will be lifting the lid off my next specialty coffee drink.

Jan 24, 2005 - 11:55 AM i always get "microfoam" even on my cappucino's i always thought that the only differance between cappu foam and latte foam was the amount of foam in the cup and so i occasionly even get "art" in my cappu's maybe this is wrong but that would be weird.
That's what incorporates the initial foam with the rest of the milk so that the entire jugful is "thickened" to a drink-yoghurt consistency and allows me to pour art.

I was making two milk drinks - technically they're somewhere between caffe latte and cappucino I suppose.
And yes - less air in the milk equals more definition, but in a 150ml cup you can get art and still have a nice 1cm plus of foam (which is all you can enjoy really - any more than that and you lose the drink under it all)
Sounds as if you just have a nice microfoam at the upper part of the milk...

If you ask me, well i think the swirl of the milk after skimming, and getting the right pouring speed, and tilting the cup if it has straight sides, then of course pouring fast and high to start ith, and loand a bit slower when it comes to the pattern.
