Topic: Mead

Mead - Wikipedia, the free encyclopedia
Mead is a separate and distinct family of alcoholic beverages, completely apart from beer, wine, liqueur, and distilled liquor.
It has been said that "a mead that tastes of honey is as good as a wine that still tastes of grape".
Mead is also known as "honey wine," although this is inaccurate.

A complete guide to making your own honey wine mead?
Mead with a grape flavor sometimes called Elizabethan mead: substitute the fruit in melomel with six pounds of white grapes.
As the importance of honey was displaced by less expensive sugars in the late Middle Ages, mead was gradually displaced by less costly beers and ales and to a lesser degree by imported wines.
Until the late middle ages both mead and sparkling mead were highly popular beverages, especially in northern regions of Europe, where wine grapes could not easily be grown.

Seeking a taste of the past? Get thee to a meadery
Mead is made from honey, diluted with water and fermented by yeast and has an alcohol content similar to wine.
The mead undergoes a second fermentation in the bottle, the bottle is turned on a regular basis so that the yeast sediment settles into its neck, and then the yeast is expelled, or disgorged, before the bottle is capped.
Temperatures for serving other meads is a matter of taste; as a general rule, dry meads are served chilled and sweet meads can be chilled or served at room temperature.

 Corking honeywine: natural or synthetic?
Mead has a long maturation curve and it is believed that many meads mature or peak at 25-30 years of age – if a cork which fails at that age is used, it is possible that using a natural cork to stopper a bottle of mead could be preparing the consumer for a disappointment.
Hence it is logical to assume that the passage of a small amount of oxygen past a mead cork will be less serious for the contents of a bottle of mead than for a bottle of wine.
The mead can then be returned to Makana Meadery, where it will be chemically analysed to determine if a difference exists between natural and synthetic closures in mead bottling.
