Oloroso - Wikipedia, the free encyclopedia
Unlike the fino and amontillado sherries, in oloroso sherries the flor yeast is suppressed by fortification at an earlier stage.
Oloroso ('scented' in Spanish) is a variety of sherry generally produced to be sweeter than fino and amontillado.
Oloroso sherry is also the base for many of the sherries developed for the international market, such as Pale Cream or Bristol Cream, in which oloroso is sweetened and coloured to achieve a desired effect.

 Harveys US - About Sherry
Cream sherries are generally Oloroso wines, sweetened with Pedro Ximénez wine before bottling.
Most Olorosos are sweetened before bottling with Pedro Ximénez, or are used as the base wine in the even sweeter Cream sherries.
Once the first classification is made, the new wines are called añadas, or "wines of the year" and are then placed in the large American oak "butts" (casks) of 132 gallons.

 * Oloroso - (Wine): Definition
Sauternes / Muscat / Banyuls / Late-Harvest Riesling or Gewürztraminer / Vintage Port / Amontillado Sherry / Oloroso Sherry / Madeira
Oloroso s are "bigger" and fuller in body, flavor and sweetness than Fino Sherries.
A Sherry that has not been aged in the presence of " flor." Dry, like all Sherry when aging in a barrel, this is the Sherry that is often sweet ened and sold as Cream Sherry.

 Philadelphia: Vines and Veins
Let’s not confuse Oloroso or Fino sherries with cream sherries or cooking sherries, as the latter are probably two of the finest examples of “travesty” in the Spanish wine industry.
Oloroso is one of the most common base wines for some of Spain’s finest dessert wines.
Sherry Oloroso is the opposite of “fino” sherries, whereby the wine does not grow the yeast.

Oloroso -style sherries have greater exposure to oxidation (because of the absence of the protective layer of flor) and are distinguished by the degree of sweetening.
Styles of Sherry Wines destined to become Fino or Oloroso Sherries are distinguished when the wine is in cask, soon after the fermentation has finished.
Casks that are to become Oloroso sherries have the alcohol increased to 18%, which prevents growth of the flor.

 Wine Tidbits - What’s in a Sherry?
Fortification is the process where pure grape spirit (alcohol) is added to the wine to stop the fermenta-tion by killing the yeast and leaving some residual natu-ral grape sugar in the wine.
An oloroso Sherry will be fortified to over 17% alcohol to produce a richer and stronger wine.
Oloroso means ‘fragrant’ in Spanish and this describes very well the darker, richer oloroso Sherries.

Sherry bucks its old-fogy image / A fortified wine with many styles, it's worth exploring
The addition of cooked grape juice or wine, or unfermented grape juice, means that oloroso smells like molasses, prunes, dates, figs, raisins, chocolate, butterscotch, treacle and few hundred other dessert components.
Oloroso is almost always a dessert style of sherry.
Oloroso wines seem to come with lots of synonyms: East India Solera, Very Old Solera, Brown sherry, cream sherry (they actually used to add cream to make it richer), to name a few.

Dry Olorosos are blended with intensely sweet wine from the Pedro Ximenez grape to produce the sweetened Cream sherries.
Oloroso is fortified with grape spirit - Aguadeinte and these wines usually end up with around 18% alcohol by volume.

The Oloroso wines of Spain are aged in direct contact with the air (aerobic aging), following a physical-chemical proccess that prevents the growth of the typical "veil" of Fino wines.
Spanish Oloroso wines are always served at room temperature.

Sherry can be created as a dessert wine or a cheese wine, or anything in between.
The two main types of sherry are the pale, dry fino/manzanilla and the dark, full, dry oloroso sherry.
All sherries are a blend using the solera system of ageing which work as follows: the barrels are stored in cool, high warehouses protected from heat and sunlight, known as 'cathedrals'.

Great Places to Eat - Oloroso, Edinburgh
The name Oloroso is Spanish for aromatic and it's also a style of sherry - but don't expect Spanish paella and tapas.
An apocryphal story goes that an American gentleman was sitting having lunch at Oloroso, delighted that he could enjoy a view of the north coast of 'France' in one direction and of the Castle on the other side.
Perfect for a special occasion, a romantic dinner, for business or pleasure, Oloroso continues to be Edinburgh's dining hot spot and the place to be seen in the heart of the city.

 Bruichladdich whisky tasting
It has a rich, unctous, oily texture, showing hints of oloroso sherry, spice and honey – very complex, a great length of dry, tangy fruit with the mere hint of salt and peat.
The palate was full and ample with soft yet intensely tangy acidity, sherried fruit and a very distinct salty character, culminating with a very long and lingering finish with hints of digestive biscuits on the after taste.
Honeyed fruit aromas mingled with crème caramel, toast and oloroso notes.

In case you don't know, Oloroso is one of the principal Sherry styles.
If you’re new to the world of Sherry (as I am), but know that you like tawny ports (as I do) – these olorosos are a great place to begin.
Wonderful focus and body make this oloroso lively and balanced, on top of the butterscotch sweet taste.

Oloroso ’ — this is a wine that’s deliberately destined to oxidative ageing due to the body of the original must.
Fundación 1819 Oloroso Montilla-Moriles: Moreno 18% 91++ A tad too dry in the palate for my taste.
In this level of quality some minor concerns do not apply: cheaper stuff may suffer from vegetable bitterness resulting from excessive pressing that reaches the grape seeds, untimely rains may interrupt the drying process, etc. Most of the wines in this tasting are well above those problems.
