Tamping is the compacting of the ground coffee in the portafilter prior to brewing.
With firm and even tamping, the water has no choice but to flow through all of the coffee uniformly, and if the barista has adjusted his or her grind correctly and the espresso machine is in good order, the resulting coffee beverage represents the best the coffee has to offer.

By grinding the coffee finer and packing it tighter in the portafilter, flow is impeded and water is forced into the coffee particles to extract more of the soluble materials.
If coffee in the portafilter is coarsely ground and/or loosely packed, water will gush out in a couple of seconds without extracting enough solubles from the coffee.
Periodically rinse and season the portafilter by running hot water through it when empty to reach operating temperature, then wiping it dry.

In the summer of 2004 a couple folks at Zoka in Seattle decided to chop the bottom off a portafilter.
Commonly called a Naked or Bottomless or Crotchless Portafilter, this modified portafilter not only results in a different espresso experience (some people feel that the espresso tastes better and most people feel that the mouthfeel is improved this way) - it may well be among the greatest training tools of all time.
But it is largely due to the fact that I don't have unfettered access to equipment at this time.

Let's start with credit where credit is due: Chris Davidson and Jacob Ellul-Blake from Zoka Coffee Roaster and Tea Company developed the "Crotchless Portafilter." Someone from E.S.I. apparently did this modification, but since they didn't share it with anyone, it don't count.
18 hours and $35 later, I had my crotchless portafilter in hand.
