Seasoning (cast iron) - Wikipedia, the free encyclopedia
Typically, cast iron woks, skillets, griddles, and Dutch ovens are seasoned.
Washing seasoned cookware with soap or soaking it in water causes the seasoning to decay and is not reccomended.
The cookware can then be seasoned by baking lard or oil onto its surface.

Iron being a reactive metal, it has disadvantages in that acidic foods (such as tomatoes, apple, vinegar) should not be cooked in it for any length of time.
Either your pot has not been sufficiently seasoned, or you are leaving the food in the pot after it has been cooked.
Cast iron is a natural non-stick surface and if your pan is seasoned correctly it WILL NOT stick.

MotheringDotCommune Forums - seasoning cast iron question
I have a cast iron muffin pan that is non-stick because of Crisco.
I bought some cast iron skillets at target and the directions for seasoning were to rub in some vegetable oil and then bake for 1 hour at 300 degrees.
07-08-2004 01:44 PM sometimes cast iron is to be cooked upside down like that when seasoned because it has a thin, waxy coating to protrect it, so you turn it upside down and it melts and burns off.

Place your cast iron upside down on your Camp Chef outdoor cooker (if seasoning barbecue grate, leave in barbecue box to avoid too much heat and cracking), a barbecue, or in your home oven.
If you have an issue with the outside of an oven use a sponge to apply the Cola, or place the cast iron in a large bowl or bucket with enough Coke to dissolve the rust (some rotating may be necessary).
Your cast iron cookware is now ready for use or let cool, then store for next use.

 Cast Iron: A Tribute
Cooking with cast iron is also healthy, not only due to the lower fat required for cooking, but also because dietary iron is transferred to food.
Cast iron is a wonderful heat conductor, so pots do not get hot spots, and they retain heat superbly.
With proper care, cast iron skillets become non-stick, but, unlike Teflon and other non stick pans, meat, etc. will sear beautifully on a cast iron surface.

Corn bread is as synonymous with an iron skillet as Aunt Jemima is to pancakes and Chef Prudhome is to blackened fish.
Whether it's cornbread or fried chicken, flapjacks or fajitas, country ham or fried green tomatoes, give me a cast iron skillet every time, and Lodge, having made their cookware for over one hundred years now, is the best.
Use Crisco and heat the greased cast iron pan in the oven for 20 min., then pour the batter in and bake as usual.

 MyKitchenTips - Cast Iron Cookware
To season your cookware, first warm your pot or skillet, then rub a thin layer of shortening (or corn oil as some cooks suggest) all over the the surface of the pan, inside and out.
Seasoning your cookware after each use is also a must to retain the quality and life of the pan.
When seasoned, a cast iron pan will be stick resistent and provide delectable meals every time.

 dresese: Seasoning cast iron
There are a lot of different methods of seasoning nonstick cookware, from coating it with Crisco and putting it in the oven, to heating it with oil on the stove.
The result of all of this was that I had a pot that was somewhat well season, but for some reason had some streaks and spots that apparently had no seasoning at all.
I like cast iron a lot - it's cheap, nearly indestructible, cooks well, and when properly seasoned, has a nice nonstick coating.

 Cast Iron
There is really only one successful way to season a cast-iron cooking utensil, and that is to use it, use it, use it.
But until the months and years have passed that are needed to properly do the job through use, the iron must be coated with layer of something to protect it from rust and prevent that metallic taste from transferring to the food.
Carbonized to a hard, smooth surface that seals the utensil from rusting and prevents the iron from exuding that metallic taste, which, by the way, is not harmful just a bit unpleasant.

This procedure bakes a nice, slick layer of carbonized grease onto the surface that keeps food from sticking and protects the iron underneath from rusting.
Once the fresh oil is dark, take it out, let cool until not quite too hot to touch, and repeat as needed to make a nice, dark, shiny--not sticky--finish.
With a clean paper towel rub all the excess off so that only a very thin film is left (If the layer is too thick, it will get sticky instead of dark and shiny).

Tips for Seasoning your Cast Iron Potjie Pot
If you choose to use this method apply a very thin coat, enough to only change the sheen of the cast iron, any more will increase the likelihood of the oil or Crisco going rancid and this will effect the flavor of your next meal.
Tradionally the use of a vegetable oil or Crisco has been used to wipe a thin layer on all surfaces to prevent rust and keep the pot seasoned and preserved.
We also recommend storing your potjie pot with the lid ajar to allow for complete air circulation.
