The traditional house offered their guests a glass of homemade wine, and then the woman of the house would place a platter with sopressata and cheese along with homemade bread on the table for everyone to enjoy.

There are many, many variations on Sopressata but I find, in general, that Sopressata is maybe a little higher in fat and therefore, a little more tender than other varieties of salamis.
Like any salami, it can range from very mild to very hot, but the common elements to any Italian salami are garlic and salt.
And, like most salamis, it is fully or at least partially air dried (many domestic brands are partially cooked) as the curing process.
