Sorbet - Wikipedia, the free encyclopedia
Sorbet (or sorbetto, sorbeto) is a frozen dessert made from iced fruit puree and other ingredients.
The term "Sherbet" is derived from the Turkish word for Sorbet, Sherbat.
Sorbets are traditionally served between the starter course and main entree in order to cleanse the palate.

Vegetarian Journal Jul/Aug 98 Fruit Sorbets -- The Vegetarian Resource Group
Sorbets have traditionally been sweet, but you can make a spicy or savory sorbet by adding chopped herbs or ground spices, such as rosemary, thyme, black pepper, or ginger to a lemon or orange sorbet.
Sorbets can be gussied up with liqueurs and brandies, with fresh mint and lavender, with shaved coconut and chocolate, and with dried fruit and nuts.
Sorbets are traditionally made with sugar, but the exchange of sugar for juice, fruit purees, or juice concentrates does not diminish the quality.

 Blackberry Sorbet Recipe - joyofbaking.com
Sorbets are quite easy to make as they only require the mixing together and freezing of the fruit, water, sugar, and lemon juice.
Sugar syrups are used to soak cakes and pastries (called a "soaking syrup" and a flavoring can be added such as extracts, juices or liqueurs), added to fondants to dilute them, used to poach fruit, as a glaze, added to frostings and sorbets, and used in confectionery.
Sorbets were very popular in the 19th and early 20th century when they were served as a palate cleanser between courses (called Intermezzo which means "in between the work").
