Vichyssoise is a French-style soup made of pureed leeks, onions, potatoes, cream, and chicken stock and is usually served cold.
Some subscribe to the idea that it was created by Louis Diat, Chef at the Ritz-Carlton in New York City in 1917.
There is a great deal of debate among culinary scholars regarding the history of Vichyssoise.

Few people realize that Vichyssoise, the cold potato leek soup with the French name, was invented, not in Paris or Lyons or even in Vichy, France, but in New York City at the beginning of the 20th Century.
Whether, according to legend, the soup, prepared in advance, wasn't re-heated in time to be served as a first course, or whether the day was warm and Chef-de-Cuisine Diat felt culinarily creative, he added cream to his mother's soup recipe and served it cold, sprinkled with chopped chives.
Although the original recipe calls for straining the cooked vegetables through a sieve, today's cooks most often use a blender.

Vichyssoise can be topped with chives, dill or parsley for added flavor.
I used her recipe, of course, and sprinkled on some fresh parsley for color (I usually use fresh chives but the crisper was bare), and while she complimented me between bites, she noted, “I always sprinkled fresh dill on mine.” That didn’t seem to deter her from having seconds, though.
Mom would put the mugs in the freezer to ensure they were nice and chilled and it was the perfect repast on a hot summer night with a sandwich or salad.
